Pudding Pops!

Heaven, I thought thy name was pudding.

So creamy and chocolaty. Oh so easy to make. The time investment to make you is so small but the flavor payoff is so big.

Then I found Ikea (another name for heaven. I swear they pipe oxygen into that place to make it so blissful, but I digress...)
And within Ikea I found these wonderful popsicle molds. My mind raced with the possibilities. I saw a blissful summer with my children eating homemade goodies instead of store bought, artificially colored, corn syrup ridden frozen treats. As soon as I got home I made grape juice pops (fab), green tea pops (sweetened with Agave nectar, also fab) and a green tea/ grape juice mix (super fab.)

Then like a bolt from the blue it hit me - put pudding in them! Heaven. Just heaven. The recipe* I use to make pudding freezes brilliantly - no frosty yuk on the outside, firm yet easy to bite into, oh did I mention they are only 120 calories?

They are also kid (and husband) approved. Yes that is pudding on her face - shame on you for thinking otherwise!

*So the recipe I use is from Smitten Kitchen. Very easy. Three steps, that's it. Take that instant pudding! I make a few changes when I make this for my family, though. I am the only member of my family that likes my chocolate as dark as I can get it, so I cut the chocolate back to 4oz and I use 2% milk. This is why my calorie count is down a bit from the original recipe. I also don't use the double boiler to cook the pudding, I just put it straight in the pot and stir constantly with a whisk. This process cuts about 10-15 minutes off the prep time. This recipe will make 12 pops.

GREEN TEA POPS?? What a thought!

I have so many great memories of my mom making me yogurt pops with things like these...I can't wait to make some of my own, now. And I love the adorable pink-and-red color scheme of those Ikea ones!

I never thought of yogurt - that's brilliant! My kids can't get enough of the stuff.
